Tapioca Breakfast Pudding
This tapioca pudding is sweet, creamy and mouth-watering. Topped with fresh fruit, nuts, and seeds, this is the perfect guilt free dessert or breakfast pudding.
Ingredients:
2 cups almond milk, divided
1/3 cup small pearl tapioca
1 can organic coconut cream
¼ tsp salt
½ teaspoon pure vanilla extra
Toppings:
2 tbsp hemp seeds
2 tbsp cashew nuts
¼ banana, sliced
Handful of blueberries (optional)
Sliced orange (optional)
Sliced kiwi (optional)
Method:
1. In a medium size bowl add tapioca and 1 cup of almond milk mixing thoroughly and let soak for at least 30 mins.
2. Add remaining milk, coconut cream, and salt into the tapioca mixture.
3. Add mixture to a saucepan stirring constantly on medium heat bringing to a boil.
4. After the mixture has reached a full boil (roughly 10-15 minutes of stirring) turning down to a low simmer for a further 15 minutes stirring often. Add the vanilla extract mixing through and take off the stove.
5. Cool for at least 10 minutes before serving. Can be placed in the fridge for a few hours for a cooler pudding.
6. Add hemp seeds, cashew nuts and banana. Optional to add more fruit like orange, kiwi, and blueberries.
