Baked Zucchini Fries and Edamame Guac
Who doesn’t love crunchy fries. These fries are made from yellow zucchini, but can be made with all types of squash or vegetable! It’s gluten and dairy free with added edamame and hemp for protein. This is a mouth-watering savoury snack you can cook any time and feel satiated.
Ingredients:
2 yellow (or green) zucchinis
½ cup almond flour or buckwheat flour
1/3 cup of nutritional yeast (optional)
1 tsp of rock salt
1 tsp of onion powder
3 tsp of all-purpose seasoning
1 cup of oat milk (or sub for another plant milk)
Dipping sauce:
1 cup of edamame beans
1 avocado
1/3 cup of diced red onion
2 crushed garlic cloves
1 juice of a lemon
1/3 cup of coriander
1 tsp of hemp seeds
Salt and pepper to taste
Method:
1. Preheat oven to 200 degrees.
2. Slice zucchinis into chip sized pieces.
3. Pour oat milk into a bowl.
4. In a separate bowl, add almond flour, nutritional yeast, rock salt, onion powder, all-purpose seasoning and mix.
5. Dip the zucchini pieces into the oat milk and then transfer over to the coating bowl rolling it around to cover the entire surface. Place on a baking tray with baking paper.
6. Place zucchini fries into the oven to bake for 25 minutes (or until crisp and golden brown.)
7. Whilst these are cooking add edamame beans, 1 avocado, garlic cloves, lemon, coriander, hemp and salt and pepper to a blender and blitz till smooth. Add the onion and mix through and pour into a serving bowl. Top with sesame seeds & chilli flakes (optional).
8. Pull fries out of the tray when cooked and enjoy!
Serves 4 as a side.
