Egg and carrot cup
Ingredients
1 whole avocado
1/2 carrot, grated
1 boiled egg
1 tbsp Djon mustard (homemade, see condiments)
1 tsp ground black pepper
Method
Roughly chop the boiled eg
g and place in a small bowl. Add Djon mustard, pepper and grated carrot to bowl. Lightly mix.
Cut an avocado in half. Scoop out the seed. Pour egg and carrot mix into centre of avocado and enjoy.
Serves: 1-2
