Millet, cauliflower and garlic soup

Millet is a gluten free ancient grain which is rich in B group vitamins, iron, folic acid, calcium, potassium, magnesium and zinc. It has a high protein content and is the perfect ingredient for a filling satisfying soup. This versatile grain helps to provide a smooth creamy texture and thickens the soup.

If you use your own homemade bone broth when making this soup you will significantly increase the nutrient density of this dish. Ingredients

2 tbsp coconut oil
1 cup raw millet
1 small white onion – chopped
1 medium size head of cauliflower – roughly chopped
2 garlic cloves– crushed and roughly chopped
4 cups water (or half bone broth, half water)
Juice of 1 lemon
1 tsp cumin powder
Salt and pepper to taste


Method

Heat coconut oil in a large saucepan or pot.

Add chopped onion and garlic and sweat on low heat until soft.

Add the millet, garlic and cumin powder, sauté for 3-4 minutes until the millet turns golden brown and slightly fragrant.

Add water (and or broth) and cauliflower florets, bring to boil.

Simmer on low heat for 30 minutes until vegetables get soft.

Remove from heat. Once the mixture is cool enough to handle, purée in blender.

Season with salt, pepper and lemon juice.
