Salmon is a great protein source and is naturally high in Omega 3 which helps support cardiovascular health and cognition. Who doesn’t want more focus, concentration and improved memory?
Ingredients
1 tbsp coconut oil
1/2 cup chopped baby spinach
1/2 can skinless, boneless salmon, drained (sustainable fish wherever possible)
2 large, fresh eggs
Makes about 1 1/2 cups
Method
In a small nonstick frying pan, heat the coconut oil over medium heat.
Add the salmon and cook until heated through.
Add the eggs and stir continuously until cooked through, about 2 minutes.
Add baby spinach at the end and stir through until wilted.
Let cool slightly and serve.
