Garlic, lemon and thyme chicken
This dish can be made ahead made ahead of time so you have a delicious meal to come home to, all you have to do is serve it with detox friendly vegetables.
Ingredients
1 chicken cut into pieces (or a combination of chicken thigh, drumstick and breast)
2 garlic cloves, unpeeled
2 lemons, cut into 8 pieces
1 brown onion, quartered
Large handful of fresh thyme.
3 tbsp melted coconut oil
3/4 cup homemade
2 tsp Himalayan salt or sea salt
Ground black pepper
Method
Pre-heat oven to 170 degrees.
Smear the bottom of a baking dish with melted coconut oil.
Place chicken, garlic, onion and lemon in tray.
Pull thyme apart and distribute throughout the dish.
Mix melted oil, salt and pepper together and massage into the chicken.
Pour broth over chicken, cover and cook for 90-120 minutes (depending on size of chicken).
Remove cover, turn temperature up to 220 degrees and cook a further 10-15 minutes.
Remove from heat and serve with vegetables or salad.
This dish goes well with our roasted sweet potato salad.
