Mustard encrusted salmon

Simple, fresh and delicious! This salmon dish is easy to prepare, fast to cook and packed with flavour. This mustard crust can also be used with any other firm fleshed fish such as Ling, Barramundi or Mulloway.

Salmon is high in beneficial Omega 3 fatty acids, namely eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). EPA is anti-inflammatory and cardio-protective and DHA helps to nourish the nervous system and protects eye health.

I recommend at least 3 serves of deep sea, oily fish per week for general wellbeing.


Ingredients

2 salmon fillets
1 tsp coriander seeds
1 tsp yellow mustard seeds
1 tsp garlic powder
1 tsp ground black pepper
1 tsp Himalayan salt
1 tbsp coconut oil


Method

Preheat oven to 200 degrees

Using a mortar and pestle or grinder, grind the mustard and coriander seeds.

Add garlic powder, salt and pepper to the spice mix.

Sprinkle over salmon and place on baking tray lined with baking paper.

Bake for 15-20 minutes, depending on size and thickness of fish.

Serve with a generous helping of green vegetables
