Spicy chicken drumsticks and cauliflower rice
Cauliflower is a member of the cruciferous family of vegetables, which also includes broccoli, cabbage, Brussel sprouts and bok choi. All of these vegetables have specialised compounds that help to promote healthy liver function. They are also ideal to support healthy hormone balance in both men and women.
I always recommend at least one serve of cruciferous vegetables every day. This is an ideal way to get it!
Ingredients
4 organic chicken drumsticks
2 tsp turmeric powder
2 tsp cumin seeds
2 tsp cayenne powder
1 tsp mustard powder
2 tsp cloves, ground
2 tsp Himalayan salt or sea salt
2 tsp ground black pepper
2 tbsp (or water)
1 small head of cauliflower
1/2 brown onion sliced finely
1-2 tbsp coconut oil
Method
Slow-Cooker method
Place drumsticks in a slow cooker.
Sprinkle 1 tsp of each spice, cayenne, cloves, cumin, turmeric, mustard, Himalayan salt and pepper over the chicken.
Add bone broth and slow cook for 3.5-4hrs.
Oven method
Place drumsticks on baking tray lined with baking paper.
Add spices, salt and pepper.
Bake in an oven, pre-heated to 200 degrees for 45 mins or until golden brown.
Cauliflower rice
Cut cauliflower florets into small chunks.
Place in food processor and process until rice like consistency.
Heat 1 tbsp coconut oil in a medium frying pan.
Add the onion and sauté for around 3 mins until soft and translucent.
Add cauliflower and remaining spices, salt and pepper.
Stir continuously for around 10-15 minutes, making sure the rice does not stick to the bottom of the pan.
You may need to add more coconut oil to the pan to moisten.
Serve chicken drumsticks with cauliflower rice and mixed greens.
