Cannellini Chickpea Parsley Salad

This filling protein salad is super tasty with a zesty punch. This recipe makes for the perfect side dish or easy light lunch.

Ingredients:

1 400g can cannelloni beans, rinsed, drained
1 400g can chickpeas, rinsed, drained
1 250g punnet cherry tomatoes
½ cup halved kalamata olives
1 bunch parsley leaves picked
1 handful of basil leaves
1 tbsp sesame seed
Salt and pepper to taste

Dressing:

2 tbsp red wine vinegar
2 tbsp olive oil
1 tsp chilli flake or to taste
2 crushed garlic cloves
1 juice of a lemon
Salt and black pepper to taste

Method:

1. In a mixing bowl whisk together vinegar, oil, chilli, garlic, lemon, salt and pepper until well combined.
2. In a serving bowl combine cannelloni, chickpeas, tomato, olives, parsley, basil and sesame seeds together and toss well.
3. Mix through dressing and serve immediately.
4. Enjoy.

Serves 4 as a side dish
