Cauliflower hummus
Who doesn’t love to snack on a creamy dip? Here’s a delicious, healthy alternative that can be served with freshly cut vegetable sticks.
Ingredients
Small head of cauliflower
1/4 cup unhulled tahini
1 tsp coriander seeds or powder
1 tsp cumin seeds or powder
1 small lemon, cut in half and juiced
3 tbsp olive oil
1-2 tsp garlic powder
1 tsp Himalayan salt
Method
Chop cauliflower and steam until slightly soft.
Using a mortar and pestle, grind the coriander and cumin seeds (or you can use powdered cumin and coriander instead).
Using a blender or bullet blend the cauliflower florets with the remainder of the ingredients (except chopped coriander) until smooth and creamy.
Add chopped coriander and stir through to enjoy.
Can be served with chopped fresh vegetable sticks for dipping such as carrot,capsicum or celery
