Peanut Satay Salad

This salad is one of my favourite recipes because it’s so quick to prepare but doesn’t skimp on taste. Creamy peanut sauce with crispy tofu and a fresh salad makes this meal high in protein, nourishing and delicious.
Ingredients:
Salad:
300g organic pressed tofu, cubed
½ cup shallots, finely diced
3 cups coleslaw (or any greens/salad mix)
2 tbsp Brazil nuts, crushed
1 cucumber, finely cubed
1 red onion, finely diced
1 tbsp olive oil
1 tbsp onion powder
1 tbsp dried parsley
Sauce:
3 tbsp organic peanut butter
2 garlic cloves, minced
1 tbsp soy sauce
1 tbsp of lime juice (or lemon)
2 tbsp hot water
1 tbsp maple syrup (or desired sweetness)
¼ tsp salt
½ tsp cracked pepper
Method:
1. Heat a medium sized pan on medium heat adding the olive oil and tofu. Add parsley and onion powder, cooking until slightly brown. Set aside to cool.
2. In a large sized bowl add coleslaw, cucumber, onion, shallots, and Brazil nuts mixing through.
3. In a medium sized mixing bowl add peanut butter, garlic, soy sauce, lime juice, maple syrup, salt and hot water and mix through until a creamy consistent is reach. Adjust to taste.
4. Add tofu and sauce in with salad mixing through. Serve with cracked pepper and shallots.
5. Enjoy!
