Spiced Lentil Pasta
This recipe is great when all you feel like is a bowl of hearty pasta. Packed full of protein and delicious spices, this pasta feels good for the body and soul.
Ingredients:
1 red onion
5 crushed garlic cloves
1 tsp cumin seed
1 tsp thyme
1 tsp of rosemary
1 tsp of paprika
1 handful of chopped fresh basil
1 cup oat milk
1 can of organic lentils
1 cup tomato paste, or 2 tbsp of concentrate tomato paste
1 packet of edamame pasta (swap for gluten free, buckwheat or another substitute)
Method:
1. Add onion, garlic, thyme, paprika, cumin, rosemary and sauté for 5 mins. Add in basil, tomato paste and stir through.
2. Add in lentils, oat milk and simmer for 10 mins. Whilst this is simmering, bring a pot to boil and cook edamame pasta and drain to set aside.
3. Serve together, adding some cracked pepper and fresh basil on top. Enjoy!
